Proteins are built one amino acid at a time, like beads on a string. Many of them are thousands of amino acids long, and every single one has to be in the right position for the molecule to fold into the shape that makes the cell function. Hemoglobin is a perfect example. One misplaced amino acid can cause sickle cell anemia. That is not what randomness looks like.
